Dough for tarts

I really like this recipe because it’s a healthy snack for everyone. The kids can have a piece or two at school and I use it as an after-dinner dessert. And if you combine it with yogurt or vanilla ice cream, the flavour becomes explosive.

Ingredients:

330 g all-purpose flour

250 g frozen butter, cut into pieces

a pinch of salt

2 tbsp granulated sugar

1 egg yolk

40 g water

Put all the solid ingredients in a bowl add the butter and rub with your hands to get a sand-like mixture. Whisk the egg lightly and slowly add it to the bowl. Work the mixture gently with your hands until all the ingredients become one. 

Place the dough in the refrigerator for 30 minutes. In case you don’t want to use the dough or you made more than one dose, you can refrigerate it for up to 3 days, or freeze it for up to a month.

Then roll out the dough into a 28 cm round pan, covering the edges. Bake at 160°C in a preheated oven for 30-40 minutes.

I usually make twice the amount of dough and put it in a baking tray, and bake for 30 minutes.

Then, on the baked tart, I place a variety of fruit that I have cut into small pieces and bake for another 10 minutes. Otherwise, I pour a mixture of 3 scrambled eggs, 500 gr heavy cream and 300 gr gouda cheese and bake for 20 minutes or until it takes on a golden colour.
